“Growing up in Buffalo, New York, we hardly ever went out for Italian, but if we did, we went to Chef's Restaurant on Seneca Street in downtown,” says Aria chef Gerry Klaskala. “Chef's, which opened in 1923 and is still going strong, is a red checkered-tablecloth kind of Italian restaurant serving huge portions of Italian-American deliciousness.”
Aria’s version of chicken Parmesan takes a tender Springer Mountain Farms chicken breast that is pounded thin and lightly breaded with Italian seasonings, crisped and topped with Parmesan and fontina cheeses. The chicken is served atop Aria’s freshly made marinara with a side of spaghetti—just like at Chef’s.
