The evening begins with a whole fish breakdown, offering a behind-the-scenes look at how to select, prep, and transform top-quality seafood. First up, Tiradito made fresh on the spot, followed by a main course featuring chef’s choice of preparation—grilled, fried, or braised—paired with organic jasmine rice and seasonal sides. Guests will be welcomed with a hand-selected glass of wine, with the full bar open for additional sips and the dinner menu available for those looking to explore more Peruvian-inspired flavors.
